Chowder at a Chain- Bugaboo Creek

After finding several other restaurants closed or running long waits, my husband and I ended up at a Bugaboo Creek for dinner on Sunday.  Despite the muggy heat outside, it was extremely cool inside.  As a result, we decided to try one of the soups of the day – Southwestern Corn Chowder.  It was incredibly thick – you could nearly stand a spoon upright in the rich chowder.  In addition to being thick and creamy, it was full of

many surprising ingredients due to its Southwestern inspiration.  In addition to the expected corn, there were black beans, small chunks of chicken, red bell peppers and a garnish of fresh parsley.  The chowder had left a mild heat in the back of our throats that was tempered by the creamy base.  The chowder seemed to be spiced with red chili pepper – whatever spice it was, it lent the chowder a pretty cream color tinged by red.  The soup was also great with Bugaboo’s dark bread dipped in it.

We went on to our main course, which included an overcooked burger but some incredibly thick and creamy mashed potatoes…but the soup was still the highlight of the meal!
